Cozy Autumn Wild Rice Soup with Earthy Mushrooms & Sweetness

Wild Rice Soup

Every autumn, the air turns crisp as vibrant leaves paint the landscape, quickly evoking memories of my grandmother’s warm kitchen. On chilly evenings, she would craft a hearty wild rice soup, its comforting aroma wrapping around us like a cozy blanket, making us feel right at home.

This Cozy Autumn Wild Rice Soup is all about layering flavors—from the earthy mushrooms to the sweetness of the potatoes—all simmered in a rich broth. By incorporating Old Bay seasoning, you’ll add a delightful complexity that captures the essence of the season.

The Essentials

  • Vegetable Stock: This rich base adds depth of flavor to the soup, making every spoonful satisfying. Feel free to swap in chicken stock if that’s your preference, but I find the vegetable stock keeps the dish hearty yet light.
  • Wild Rice: With its chewy texture and nutty flavor, wild rice is the star of this soup. It holds up well to the flavorful broth, giving each bite a delightful chew.
  • Baby Bella Mushrooms: These gems bring an earthy taste that complements the sweetness of the sweet potato beautifully. Their umami flavor will keep you coming back for more.
  • Garlic: Whispers of garlic create an aromatic foundation that fills your kitchen with warmth. It pairs perfectly with the vegetables, enhancing their natural flavors without overwhelming them.
  • Carrots: Diced carrots add a subtle sweetness and a pop of color to the mix. They cook down just right, providing a little surprise in every bite.
  • Celery: This crunch-maker brings a refreshing brightness to the soup. Not only does it add texture, but it also balances out the richer elements.
  • Sweet Potato: Creamy and slightly sweet, this star ingredient thickens the soup while infusing it with lovely autumn flavors.
  • Onion: A classic flavor builder, the onion becomes beautifully translucent and sweet when sautéed, forming the aromatic backbone of the soup.
  • Bay Leaf: Just one bay leaf adds a fragrant depth that rounds out the overall flavor profile. Remember to fish it out before serving!
  • Key Technique: Old Bay Seasoning: This unique blend of spices introduces a hint of coastal charm that enhances the flavors of the wild rice, mushrooms, and vegetables without overpowering them.
  • Coconut Milk: Creamy and rich, the addition of coconut milk transforms the soup into a velvety dream—plus, it adds a subtle sweetness that pairs beautifully with the earthy ingredients.
  • Kale: This hearty green not only boosts the soup’s nutritional profile but also offers a satisfying texture. Toss it in towards the end to keep it vibrant and tender.
  • Garnish: A sprinkle of freshly cracked black pepper or a drizzle of olive oil just before serving can really improve this cozy bowl of goodness.

Trust me, each ingredient plays a vital role in crafting this delightful autumn experience served in a bowl. Enjoy the warmth, my friends!

Let’s Dive into Cooking

Pulling together this Cozy Autumn Wild Rice Soup is a delightful process that takes about an hour from start to finish. Trust me, the end result will warm your heart and fill your kitchen with inviting aromas!

  1. Sauté Veggies: Heat 1 tablespoon of butter or olive oil in a large stockpot over medium-high heat. Once hot, add the diced onion and sauté for about 5 minutes, stirring occasionally, until it turns soft and translucent. The sweet, golden scent will swirl through your kitchen, making it feel like home.
  2. Add Garlic: Stir in the minced garlic and cook for an additional 1 to 2 minutes. You’ll know it’s ready when the garlic releases its fragrant aroma, filling the air with hints of warmth that hint at the comfort to come.
  3. Incorporate Ingredients: Add the vegetable stock, uncooked wild rice, sliced baby bella mushrooms, diced carrots, celery, sweet potato, bay leaf, and Old Bay seasoning into the pot. Stir everything together to ensure the flavors mingle and bond beautifully.
  4. Bring to Simmer: Continue cooking the mixture until it reaches a simmer—this shouldn’t take long. Once simmering, reduce the heat to medium-low, cover the pot, and let it work its magic. Allow it to simmer for 30 to 40 minutes, stirring occasionally. Keep an eye on it; you’ll notice the wild rice becoming tender and plumping up, soaking in all those incredible flavors.
  5. Add Final Touches: Once the rice is cooked, gently stir in the coconut milk and roughly chopped kale. The kale will soften, melding into the creamy soup. Taste your creation and season it with fine sea salt and freshly cracked black pepper, adding more Old Bay seasoning if you’d like.
  6. Serve and Enjoy: Ladle the soup into bowls and serve warm. Gather around the table, grab some crusty artisan bread, and enjoy the hearty comfort of each spoonful!

This Cozy Autumn Wild Rice Soup is more than just a meal; it’s a warm embrace on a chilly evening. I know you’re going to love it as much as I do!

Step 2 — Cozy Autumn Wild Rice Soup with Earthy Mushrooms & Sweetness

Make It Your Own

I love how versatile soups can be, especially when it comes to adding your personal touch. Here are a few fun variations and alternative methods for this cozy goodness:

  • Creamy Coconut Magic: If you’re not into coconut milk, feel free to use a cream base for a richer soup. Just check that it’s unsweetened!
  • Chicken Stock Swap: For a heartier flavor, try chicken stock instead of vegetable stock. It adds a savory depth that’s just delightful.
  • Rice Variety: Not a fan of wild rice? You can experiment with different rice such as brown or jasmine. Just adjust the cooking times a bit—you want it all to be tender!
  • Seasoning Alternatives: If Old Bay isn’t your thing, try using a mix of your favorite dried herbs like thyme or rosemary. Each will bring its own unique flavor to the soup.
  • Cooking Method Choice: Whether you’re using the Instant Pot, a slow cooker, or the stovetop, it’s all good! Just follow the method that suits your schedule.
  • Add a Heartwarming Protein: For a nostalgic twist, throw in some shredded chicken. It’ll make the soup even more comforting and satisfying.

There’s no wrong way to make this soup yours!

Preserving the Cozy

Leftovers from this autumn delight are a treasure you’ll want to hold onto! To store your soup, simply let it cool down a bit before transferring it to an airtight container. In the fridge, it’ll stay incredible for up to five days. If you’d like to save some for later, this soup freezes beautifully—just make sure to use it within three months for the best flavor.

When it’s time to enjoy your soup again, I recommend reheating it on the stovetop over low heat. Give it a gentle stir now and then to keep everything well combined and to prevent it from drying out. If it seems a little thick, feel free to add a splash of vegetable stock or water to bring back that creamy texture. There’s nothing quite like a warm bowl of goodness to embrace you on a chilly day!

Heat (an extra) 1 tablespoon butter or olive oil in a large stockpot over medium-high heat.  Add onion and sauté for 5 minutes, stirring occasionally, until soft and translucent.  Stir in the garlic and cook for an additional 1-2 minutes, stirring occasionally, until fragrant.
  6. Add base ingredients. Add in the vegetable stock, wild rice, mushrooms, carrots, celery, sweet potato, bay leaf and Old Bay seasoning.  Stir to combine.
  7. Simmer. Continue cooking until the soup reaches a simmer.  Then reduce heat to medium-low, cover and simmer for 30 to 40 minutes until the rice is tender, stirring occasionally.

The addition of Old Bay seasoning is a game-changer in this recipe, infusing the soup with a complex blend of spices that elevates the dish to new heights. This seasoning not only enhances the natural flavors of the vegetables and wild rice but also introduces a subtle brininess that mimics the essence of coastal cuisine, making each spoonful a delightful surprise.
